I don't think you can do anything about the spare barrels of rum in your inventory though after that.

No bug in the end, I went back on a whim to talk to the quest giver and there was a new dialogue option, along the lines of "I'm sick of carrying your rum for you" (a feeling that I can certainly relate to
). Once selected, it completes the quest and you also get rid of the extra kegs.
