Short description of the issue, i'm paraphrasing Little_D's explanation from the ATAG forums:
The 109 had ground-adjustable trim for rudder (maybe elevator too? i'm not sure). This way, even though the pilot couldn't adjust them in flight, it was still possible for the ground crew to adjust them for a specific speed.
That speed was usually 400km/h (the speed recommended by the manuals), to give a good medium between cruise and full power, so that pilots wouldn't have to keep pressing their pedals all the way through the mission.
In the sim the 109's rudder is also pre-trimmed. Prior to this patch it was correctly trimmed for 400km/h, but tests revealed that it is now trimmed for 300km/h. This makes it harder to fly properly and is historically inaccurate.
The above is what was found by Little_D's tests.
I don't know if it happens because they actually did change the trim presets for the 109 or it's just a side effect of other changes in the FM, but the bottom line is that the 109 currently flies trimmed for 300km/h instead of 400km/h.
