I have seen singers use 2 mics before, lots of times.
I agree with you about the use of Stereo, it's not used as creativley as it used to be, if you listen to some late 60's stereo recordings they would do something crazy like have the drums far left the bass far right and stick the vocals over to one side too.
It's much more subtle these days, you get things ping ponging around and they tend to use more width. Some stereo Beatles recordings are really interesting through headphones. You can remove certain sounds simply by messing around with the balance because they have sounds comming out of only one side.
Strawberry Fields Forever by The Beatles is a good exampe. You can pan left or right and get a drastic change in the sound of the song.
