Do you have your pitch on a slider or on keystrokes? If you have it on a slider I have found that it is best to totally remove any input commands that can be assigned to a HOTAS from the keystroke input section. Also if yiu have it on a slider you may have to calibrate the slider.

For the carrier landings.. you will just have to practice.. It is good to find the stall speed of any AC you are trying to fly.
For the speed issue and keeping up with the AI .. that has been a longstanding issue in this sim but ther are some things you can do.
You have to make sure that you are trimmed properly and it is best to try to use the instruments.. Look in The Nugget's Guide linked in myh sig .. and scroll down to Neural Dream's Aircraft reference guide. It will show you some of the gauges.. try not to climb at a steeper angle that the rate of climb indicator on your chosen plane. Most planes have one... Also to get the most out of any plane yo need a well balanced use of throttle & pitch..
