You have to keep the button pressed to make any noticeable pitch changes, because they are driven by an electric motor. According to a link posted here a couple of weeks ago, the pitch control system on the DB605 could turn the blades a mere 1.5 degrees per second, so it wasn't really fast in reality.

I haven't tested if this matches what we have in the sim, but the engines are different as well (we have DB601s) so there could be differences. Also, 10 minutes on the clock instrument corresponds to 1 degree, so if you keep the button pressed and you see it turning 15 minutes per second it would match the specs of the DB605 system.
