Try these missions in sim mode or at least realistic. Realistic helps your ability to spot how far away a bogey is and where it's headed, without that confusing red dot obscuring it. Sim helps break the habit of always attacking from the 6, instead of setting up a higher-profile mid-quarter shot.
I've got all 16 bombers back in Downtown Berlin exactly twice. It's very difficult. The mission is more a test of escort tactics than killing the enemy. What you need to do is climb up nice and high above your package. It's easy since your la7 is much faster. The first bogeys will attack from the front and usually climb then pass through the formation at high speed. Just look for other la7's chasing something, then dive to intercept it. The Jerries are smaller and they will stay fast, so don't turn too hard, make a nice gradual turn and you should be able to nail one before it gets a bomber.
The other one might kill a bomber anyway, it's a matter of luck. If not, locate it and attack, but don't follow it away from the formation. If it gets separated from the bombers, let your wingmen harass it, and attack it only if it comes back. Two more fighters attack before the target is reached.
Staying with the formation is the most important part of this mission. Once your bombers turn around, if you've killed or chased off the first 4 fighters, it's nearly home free. Just keep flying around above the formation. When the second wave passes, if there's any bogeys attacking it, ignore them. Stay above the first wave and you shouldn't have to chase off more than 1 or 2 bogeys on the return trip.
