I don't think you can. You can turn off cutscenes but I guess that only turns off the cutscenes for the campaign; it doesn't seem to apply to the loading/unloading animation. Having to watch the animation every time you enter a warehouse can get annoying, indeed. But normally you'll be spending a lot more time driving than loading/unloading so it's not
that bad. There are a lot of worse things about this game than that
