What plane is best in dogfight? that depends on your style, on the aircraft of your opponent(s), and on the difficulty setting.

Realistic: in most cases you are best of with a good turning plane. Because of the red arrows pointing at your enemies, 9 out of 10 fights will end in a turning fight. i prefer the spit mk IX of XVI in realistic. They have a powerfull armament, and a very nice turn rate. If flown correctly, there is no plane you should not be able to outfly.
Bf109's will be easy target, as they cant keep up with turning
La/yak3 can be kind of a pain in the ass, but they should not be able to get on your six
I-153/I-16: if you encounter these, with whatever plane you have, fly awayyyy. They cant keep up if you fly straight. If you start turning against a I-16/I-153, you will die.
Sim mode:
Pick the plane you feel most comfortable in. I used to take spit here as well, but now I'm trying out the 109 series. You wont get outturned all the time in sim, because without the arrows pointing at you, it is 'not hard' to lose an enemy. You can force the dogfights to be something else than just a turning fight.
Soooo, the best overall dogfighter is imho the spit. But depending on your opponents, and difficulty, other planes will do the trick as well.
Are you fighting a bunch of spits? try the I-153/I-16, you can outturn the spits with ease and can kill many, if they dont fly away.
