I lost count of the number of stupid, cuss word filled insult messages that came from my 360 online play. I have SF IV for both systems and I probably have over a hundred insult-messages from players regarding that game. I have way more time on SF IV on my PS3 and only 2 insult-messages total. I have none from BOP so far after a hundred or so online matches.
360 online demographic may have either more young/immature or slightly retarded players or a combination of both.
It is noticeable for sure.

One thing to keep in mind is that almost every player you meet online on the Xbox 360 has a headset. Most Xbox 360 systems come with a headset in the box and if that one breaks or you bought an Arcade bundle then it's easy to get ahold of a cheap headset since the Xbox 360 uses a simple, and very common, 3.5mm plug.
The PS3 uses Bluetooth headsets and are not bundled with the system. Bluetooth headsets are not very cheap and if you do find a cheap one odds are it will have a good amount of problems. Because of this, the majority pf online PS3 gamers do not use headsets to communicate
I'm sure there are just as many ass hats on the PS3 as there are on the Xbox 360, it's just easier for the 360 users to be vocal about it.
