I find having both ailerons and elevators 7/12 - 8 notches down works a treat. It can perform a nice tight turn without the risk of stall, only real concern is the speed. I find that with the notches down by say only 4 or 5 it still pulls the same turn as it does with the notches down by 7 1/2-8, just adds the risk of stalling out.
