Is there any information about which RPM and manifold pressure settings to use for various planes to get the best cruise economy, range, power, etc?

There is an aircraft guide that is provided with the DVD, it has the rpm settings for various speeds.

Alternatively you can use Google but expect there to be discrepancies.

To expand on Codex's point, don't expect the real cruise settings to be usable in-game. Opening the throttle, and reducing revs (whilst at the correct height) often causes overheat (or at least high coolant temperatures) despite MP and RPM being at correct, realistic levels.
